What to Make This Week: Lemon Orzo, White Bean Stew & a Sweet Treat

I don’t know about you, but this in-between season has me craving all the cozy yet still light and fresh meals. One day it’s sunny and 75, the next it’s rainy and breezy.
Soooo, I’ve been leaning into that sweet spot where comfort food meets springtime and today I’m sharing three recipes that do just that!



Lemon Pea Orzo
Bright and creamy lemon pea orzo made with zucchini and fresh basil. It's the perfect easy spring lunch or dinner!
Ingredients
2 cups orzo, cooked
1 tbsp olive oil
3 cloves garlic
1 zucchini, diced
1 cup frozen peas
1 lemon, juiced
1 tsp lemon zest
¼ cup dairy-free cream *I used trader joe's heavy vegan cream
¼ cup nutritional yeast
Creamy White Bean Stew
This creamy white bean stew is packed with protein, tasty, and simple to throw together, making it a weeknight staple in my kitchen. It’s nourishing, comforting and the perfect springtime comfort meal.
Ingredients
1 tbsp olive oil
½ yellow onion, chopped
4 large cloves garlic, minced
1 16 oz block silken tofu
1/2–3/4 cup unsweetened plant milk (just enough to blend)
¼ cup nutritional yeast
1-2 tsps kosher salt
black pepper, to taste
2 cans white beans (like cannellini or great northern)
2-3 cups baby spinach
1 cup frozen peas
1 medium-sized lemon, juiced
¼ cup basil, chopped
red pepper flakes or hot sauce, to taste
Pistachio Tahini Cookies
Sweet, salty and loaded with flavor, these pistachio chocolate chip cookies are my new go-to. They’re soft in the center, crisp on the edges, and covered with melted chocolate, crunchy pistachios, and flakey sea salt.
Ingredients
½ cup dairy-free melted butter
½ cup granulated sugar
¼ cup brown sugar
2 tbsp runny tahini*
1 tsp vanilla extract
¼ tsp almond extract
1 cup + 2 tbsps all-purpose flour
1 tsp baking soda
1 tsp sea salt
½ cup roasted pistachios, chopped finely
½ cup dark chocolate, chopped
flakey sea salt for topping
