Sunday Table: Cornmeal Waffles with a Blueberry Compote

For a minimal ingredient, yet elevated brunch

Hellooo and happy Sunday!

I hope your week is off to a great start. Welcome back to the Sunday Table :)

On the table today? Cornmeal waffles with a blueberry compote (recipe below) a big glass of water, an iced date latte (recipe also below!), and my journal.

I try to journal everyday whether it’s 3 sentences of 3 pages. And honestly half the time it’s just me rambling about my to-do list BUT it gets me off my phone in the morning and helps me get any thoughts/ideas on to paper.

Also the glass I’m using is from this set my mom got me from Williams Sonoma and guys, I’m obsessed. They come with lids and they’re the perfect size for a slightly oversized iced latte.


I love listening to music while I cook. And especially love picking songs that match the vibe of what I’m making. But I’m going to be honest… I’ve been on a real Hannah Montana and early 2000s kick (think Augustana and The Fray lol).

Safe to say those were not matching the vibe of this brunch so I switched it up this morning and tuned into these. So, here are some upbeat(ish) Sunday brunch songs for you to listen to while you cook your waffles!

Of course all good Sunday brunches have to be paired with an equally good drink. So today we’re making an iced date latte. It’s so easy but also tastes so good. I genuinely think it’s better than most coffees I get at coffee shops. And it takes 2 minutes to make. 2 minutes!

I’ve also been reallllly into using Cometeer coffee. Now she’s a bit pricier ($2.50 per cup) but it does rival high-quality coffee shop coffee, so it’s a perfect Sunday treat! It’s flash frozen coffee pods that you pour over a cup of ice (or add to hot water) and you have the perfect coffee.

Iced Date Latte

I promise that is a peach napkin holder and not a pumpkin. As much as I do love fall…I’m not there yet!

Ingredients

  • 1 cup non-dairy milk

  • 2 dates, pitted

  • 1/4 tsp cinnamon

  • 1-2 espresso shots

  • 1 cup of ice

How to Make

Step 1: Blend together the milk, dates, and cinnamon until smooth. Pour over a cup with ice. Top with the espresso shot(s) and mix together!

And for my favorite part….what we’re eating!

A mix of a cornbread muffin and your typical waffle, these cornmeal waffles are the perfect summer-y brunch.

I made them using my dash waffle maker (we love her! she’s lasted me years and she’s 9 dollars…) and the instructions below follow that format, but if you’re using a bigger waffle maker you can just add more batter and adjust the cook time.

Also, these waffles are PERFECT for meal prep. You can just toss them in the freezer and toast in the morning (more detailed instructions below on that process).
