I don’t know what it is about the end of March, but it always feels chaotic. Maybe it’s the in-between seasons, where one day it’s warm and sunny, and the next, it’s cold and gray. Or, maybe it’s just that we’re all coming out of hibernation (at least I am), adjusting to longer days and busier schedules. Either way, I want meals that are easy, cozy, and still feel fresh—something that bridges the gap between winter and spring.
Soooo, we’re making garlick-y tomatoes & white beans with lemon and balsamic.
This is one of those recipes that requires minimal effort but is so tasty! The cherry tomatoes soften and burst into a jammy, garlicky sauce, the beans add creaminess, and the fresh lemon brings everything to life. And, of course, it’s mandatory to serve with a thick slice of sourdough (or your favorite bread!).
Garlicky Tomatoes & Butter Beans with Lemon



Servings: 2-3 Servings
Prep Time: 5 minutes
Cook Time: 10 minutes
Ingredients:
1 tbsp olive oil
½ yellow onion, thinly sliced
4 cloves garlic, minced
12 - 16 oz cherry tomatoes
1 can (15 oz) white beans, drained & rinsed
Juice of 1/2 a lemon (about 1-2 tbsp)
1/4 tsp oregano
Handful of fresh basil, chopped
Salt & black pepper, to taste
Balsamic vinegar, for topping
Sourdough (or your favorite bread)
Instructions:
Heat olive oil in a pan over medium heat. Add the sliced onion and cook for 3–4 minutes until softened and slightly caramelized.
Add the garlic and cook for 30 seconds, stirring to avoid burning.
Stir in cherry tomatoes. Let them cook for 2-3 minutes. Then, give a stir and cook for an additional 2-3 minutes until they start to burst.
Add the white beans and lemon juice. Stir well, and cook for another 1-2 minutes to let everything meld together. Season with oregano, salt and pepper, and top with the chopped basil and a generous drizzle of balsamic.
Spoon the mixture over your toast and (optionally) finish with a bit of lemon zest for an extra burst of flavor!
This dish is perfect for when you need something that feels nourishing without being heavy :)
