Spring is finally here, and that means the markets are looking a bit more diverse this month with fresh, vibrant produce.
This month is allllll about bright flavors—think juicy strawberries, crisp radishes, and tender asparagus—perfect for refreshing, lighter meals as the days get longer and warmer.

Vegetables
Carrots: Roast until caramelized, blend into soups, shave into bright spring salads, add to smoothies, or bake with. The list goes on!
Fava Beans: Toss into pastas, mash onto toast with lemon and olive oil, or blend into a creamy dip.
Artichokes: Steam and serve with a lemony dip, roast for crispy edges, or add marinated artichokes to grain bowls.
Asparagus: Roast with garlic and lemon, grill for smoky flavor, or shave into salads.
Sweet Onion: Caramelize for a rich, sweet topping, add to sandwiches, or use as a base for soup.
Radish: Slice thinly for a peppery crunch in salads, roast for a milder flavor, or serve with butter and flaky salt.
Spinach: Wilt into warm dishes, blend into smoothies, or toss into grain bowls.
Peas: Mash onto toast, toss into pasta with lemon and garlic, or make my pea, leek and spinach lasagna.
Fruits
Avocado: Mash onto toast, blend into creamy dressings, add to smoothies for extra richness, or use as a topping for grain bowls!
Strawberries: Enjoy fresh, slice into salads, blend into drinks, or roast for a jammy topping.
Oranges: Perfect for snacking, adding to salads, or squeezing into bright citrus dressings.
Rhubarb: Stew for a tart compote, bake into crisps and pies, or add to mocktails/cocktails for a seasonal twist.
