Happy 2025!
I’m currently typing this as I prepare to head back to LA after two (very short) weeks in Indiana visiting family. And honestly? I think I kind of miss the cold…or at least the snow. ❄️
And while I’m not a big NYE partier (I’m lucky if I make it to 12) I do love looking ahead at what’s to come.
Plus, with January in full-swing, lots of people have made resolutions to eat more plants, eat healthier, try going vegan, etc. and one of the easiest ways to make these resolutions stick?!
…By starting your day off with a hearty, tasty breakfast. So below I’ve included six of my favorite plant-based breakfasts to kick off the first week of 2025.

🥞 6 Filling Breakfast Ideas for the New Year






Baked oat cups filled with yogurt and berries
Oatmeal bowl topped with fruit, yogurt, and cereal/granola
Tofu scramble (see below!) paired with tempeh bacon and roasted potatoes
3 ingredient pancakes topped with berries
Protein cereal (my favorite is three wishes) paired with granola, berries, and non-dairy milk
Tofu scramble mixed with pesto and topped with avocado on a mini tortilla shell
Ingredients for Tofu Scramble:
1 tbsp olive oil
2 cloves garlic, minced
1/2 an onion, chopped
1 14oz package of extra firm tofu, pressed
2 tbsp nutritional yeast
1/2 tsp salt
1/2 tsp turmeric
1/2 a red pepper, chopped (optional)
1/4 tsp black salt (optional, but so good)
Steps:
Sauté the onion in a pan with olive oil on medium heat until translucent, about 5 to 7 minutes.
Add in the minced garlic and cook for an additional 1-2 minutes.
Tear the tofu in pieces, and add into the pan, continue to break apart with a spatula / wooden spoon, let cook for 2-3 minutes to remove all excess liquid
Add in the salt, black salt, nutritional yeast, and turmeric.
Mix and let cook for 3-4 minutes while stirring frequently.
If using, add in the pepper and let cook for an additional 2 minutes.
